What Can You Still Plant in October? A Late-Fall Vegetable Guide

As we enter late fall, the month of October can make our gardens look finished before it actually is.

Tomatoes and cucumbers have slowed down, and the first frost has arrived. So the question is, what can you still plant in October? The answer depends on where you are and how much time you have before the ground freezes. In mild climates, you may still have time for lettuce, spinach, herbs, and other cool-season crops. In colder regions, October is more about planting garlic, protecting crops that are growing, and preparing the garden for winter.

What Can You Plant in October?

The most practical October choices are: garlic for a harvest next summer. Other options are spinach, kale, lettuce, and other hardy greens where the growing window allows. You can also consider herbs such as parsley, cilantro, and thyme in suitable conditions.

Cover crops such as winter rye or certain clovers if you're finished with vegetables for the season. Some fall crops can also be left in place through winter with mulch, frost cloth, or other protection.

Panting in the month of October also very much depends on your location. In coastal climate, you may have several more weeks of growing weather. Someone whose ground freezes sooner may have enough time only for garlic or overwintering crops.

Start With Your First Frost

Check your local first frost date before you put anything in the ground, as well as how much growing time you have left. You also need to check each crop's days to maturity.

Fall crops also tend to grow more slowly as temperatures and daylight decrease, so simply counting the days on the seed packet may not be accurate. It is recommended to account for local frost dates and crop maturity when planting vegetables in late fall.

Garlic

Garlic is typically planted in fall and harvested the following summer. The cloves need exposure to the cold to develop properly, while planting early enough gives them time to establish roots before winter.

Plant your garlic in fall about three weeks before the ground freezes. That makes October an especially ideal month to plant garlic in many regions. Choose large, healthy cloves, plant them with the pointed end up, and add mulch after planting. A good garlic bed can sit quietly through winter and return by spring.

Kale

If you already have kale in the garden, there’s no need to pull it out just because October has arrived. Depending on the variety and your climate, it can continue producing well after frosts.

Starting new kale from seed in October is more climate-dependent. While established transplants can give you a much better head start. A healthy transplant has a much better chance of growing well in the remaining season than a seed that still needs weeks to germinate.

Spinach

Spinach prefers cool weather and can be grown in both spring and fall. Whether October is still a good month depends on your location. In a mild climate, you may be able to sow or transplant spinach for a late fall harvest. In colder regions, October may be better suited to protecting spinach that was already planted earlier.

A raised garden bed with good drainage is useful for growing spinach because you can keep the soil workable and add protection as well.

Radishes

Radishes make sense late in the season because they grow quickly. The catch here is temperature. Radish seeds germinate best in cooler soil, but not every October stays warm enough for fast growth.

In a mild climate or early October, you may still get a useful crop. If the weather is already turning cold, you're better off choosing something more cold-tolerant or growing radishes under protection.

Asian Greens

Bok choy, tatsoi, and similar crops are well suited to cool weather and can provide relatively quick harvests. Asian greens are a regular staple of fall vegetable gardens and many can be started from seed or transplants. They're particularly useful in a raised bed because you can plant them in smaller blocks rather than needing a lot of space.

Carrots and Beets

Carrots and beets take time to mature. If your climate gives you enough time, small or fast-maturing varieties may still be worth trying.

One advantage of growing them in a raised garden bed is that the soil is easier to manage and harvest. You can keep the roots loose, improve drainage, and add a protective layer of mulch without disturbing other areas.

Herbs

Parsley, cilantro, thyme, and mint are among the herbs that can work well in the late fall season, depending on your climate. Herbs are especially useful in small gardens because they don't take much room and you can harvest what you need.

For a patio or balcony, a few containers of herbs may be a much better use of space than trying to start another large vegetable crop.

What Should You Not Plant?

This is also an important consideration. Warm-season crops such as tomatoes, peppers, eggplant, and summer squash generally need more warmth and a longer growing period than most gardens can provide by this time.

A greenhouse can change this by giving plants more protection and more growing time. But an unheated greenhouse isn't a warm enough environment once winter arrives. If you have a few weeks left before frost, focus on your cool-season vegetables.

What Can You Plant in October in a Raised Bed?

Because the growing space is contained in a raised garden bed, it's easy to clear a finished crop, and plant something new. You can add a cover if temperatures drop too.

For October, you can consider growing garlic for next summer in a raised bed. Spinach and kale for late-season greens, as well as parsley or cilantro for the kitchen. Add a mulch layer for any space you aren't planting.

Vego's metal raised garden beds are available in a range of configurations, making it possible to dedicate one section to overwintering crops while leaving other space for winter preparation.

What Should You Plant Now for Next Summer?

Some plants aren't meant to produce a harvest before winter. Garlic is the obvious example: the cloves establish roots in fall, go through the cold season, and then resume growth in spring for  a harvest by summer.

Depending on your location, other crops can also be planted or established for overwintering, including certain onions and perennial herbs. Late fall is also a good time to establish cover crops, including oats, barley, and wheat.

Protect Your Plants From Frost

Depending on your climate, row covers, greenhouse covers, or a greenhouse can add necessary protection. The crops that need protection are usually tender ones or newly established seedlings. Hardy crops can tolerate much more cold.

For a raised garden bed, this is particularly convenient because a cover can protect an entire defined growing area.

Should You Use a Greenhouse?

A greenhouse can be useful when you want to keep growing after outdoor temperatures become unreliable. You can move tender container plants inside, start cool-season crops under protection, and give fall vegetables a more sheltered environment.

An unheated greenhouse still gets cold, and the shorter days of late fall slow plant growth. The crops that make the most sense are the same ones that can handle cooler temperatures: spinach, kale, lettuce, herbs, and other cold-hardy choices.

What About Containers and Planters?

Containers are useful for herbs, greens, and smaller vegetables because you can move them into a sheltered location when frost comes. They're also a good option for gardeners who don't have enough ground space.

For plants that need more consistent moisture, self-watering planters can make container gardening easier. Young plants still need consistent moisture while they establish, and containers can dry out faster than garden beds, so self-watering planters are a good choice to address this.

What to Do With Empty Garden Space in October

You can spread finished compost in idle space, add mulch, plant a cover crop, or protect your soil. Barley, oats, and winter wheat are among the cover crops that can be planted in late fall, depending on local conditions.

FAQs

What vegetables can I still plant in October?

Depending on your climate and first frost date, you may still be able to plant spinach, kale, lettuce, arugula, radishes, Asian greens, herbs, and other cool-season crops. Garlic is also commonly planted in fall for harvest the following summer.

Is October too late to plant a vegetable garden?

Not necessarily. October may be too late for many warm-season vegetables, but cool-season crops and garlic can still make sense in many regions. The deciding factors are your local frost date, soil temperature, crop maturity time, and whether you are using season-extension protection.

What should I plant in October for next summer?

Garlic is one of the best-known October plantings for a harvest the following summer. Fall planting gives garlic time to establish roots and receive the cold period it needs for proper bulb development.

Can I plant garlic in October?

Yes, in many regions. Plant them about three weeks before the ground freezes, while planting calendars vary by location.

What vegetables can survive frost?

Cold-tolerant crops such as kale, spinach, arugula, some lettuces, radishes, carrots, beets, and several brassicas can tolerate frost to varying degrees. Their actual hardiness depends on the crop, variety, maturity, and weather conditions.

What can I plant in my raised garden bed in October?

Try garlic, spinach, kale, lettuce, arugula, radishes, Asian greens, and suitable herbs if your local weather gives them enough time. Raised beds are also useful for protecting fall crops with covers and refreshing soil between summer and fall plantings.

Can I plant lettuce in October?

Yes, especially in mild climates or early in the month where enough growing time remains. Leaf lettuce is particularly useful because it can be harvested young and does not require a long growing period.

Can I plant radishes in October?

You may be able to, particularly in mild climates and early October. Radishes prefer cooler conditions, but very cold soil slows germination and growth.

Should I use frost covers for October vegetables?

Frost covers can help protect vulnerable crops from light frost and extend the growing season. They are especially useful for tender crops and young seedlings, while hardy vegetables may need less protection.

Can a greenhouse help me grow vegetables in October?

Yes. A greenhouse protects crops from wind, rain, cold air, and some temperature swings, giving you more control over the growing environment. Cool-season vegetables such as spinach, kale, lettuce, herbs, and Asian greens are good choices for fall greenhouse growing.

Should I leave my raised beds empty over winter?

You can, but leaving the soil completely bare isn't always the best option. Depending on your climate, mulch or a suitable cover crop can help protect the soil. Cover crops such as winter rye can also add organic matter and improve soil structure when managed correctly.

Can I still plant herbs in October?

Some herbs, including parsley, cilantro, chives, sage, rosemary, and thyme, can work well in fall depending on your climate. Illinois Extension specifically recommends several of these for fall gardening.

Final Thoughts

The month of October is more of a time for sorting. Some of your crops are finished and need to go. Others can keep producing with a bit of protection.

So before you think the garden is done, take another look at the empty spaces. Maybe there is still time for spinach, or perhaps now is the right moment to plant garlic.
